Published 1991 If you enjoy eating well, you will enjoy this book. We have taken a middle-of-the-road point of view, and based our recipes on vegetarian principles without being too strict. We naturally did not use meat, but included eggs and dairy products in many recipes. You can also introduce your family to vegetarianism by using our recipes as accompaniments to meat, chicken or fish. If embarking on vegetarianism as a way of life, you need to research and understand foods to be sure your meals are balanced. We have used some ingredients that may be new to you; these are described in the glossary. And we show you how to prepare yoghurt, bean sprouts, peanut butter, mayonnaise, soy milk and cottage cheese. Our recipes contain no salt. Instead, we used vegetable stock cubes and vegetable stock paste to boost flavours; these can be omitted, if you prefer.
